Light Spring menu

Any ideas on some light spring dishes? I lean towards a heavier southern style :-p
Please teach me some of your fine tastes :-)

Cara Francesca,
being back from Sicily......I can suggest a 'Fennel & orange salad" for your light spring menu:

(for two)
1 fennel
1 fat juicy orange
6 black olives - better without stone (seasoned in garlic, peperoncino and lemon or orange peels - or any you have in your pantry)
some pine nuts
a little olive oil
a little salt

peel the orange to pulp (do not leave any of the white stuff)
slice it or cut it in small pieces directly in the bowl so that you don't loose the juice
clean and slice the fennel very thinly and put it in the bowl
add the pine nuts, the olives and just a little olive oil and salt. mix. enjoy.

Grazie mille! I love this idea. I don't eat fennel as often as I used to growing up.

Dear Francesca,
I suggest you a red, green and yellow salad.

1 melon
15-20 strawberries
salad like "radicchio" (it's better a bitter salad, in order to balance the sweetness of strawberries and melon)
extravirgin olive oil (it's perfect the extravirgin olive oil made with"Olive taggiasche")
salt


peel the melon and cut the pulp in small cubes
cut the strawberries
mix them with the salad, add some drops of extravirgin olive oil and a little, just a little of salt.

Enjoy!
