Il piatto tipico di Catanzaro, capoluogo della Calabria, realizzato con frattaglie di bovino e mangiato nella caratteristica "pitta", pane dalla forma circolare. Il documentario, partendo da un mulino e da un macello, affronta tutte le fasi necessarie alla preparazione di questo piatto, entrando nelle case dei catanzaresi per raccoglierne aneddoti e ricette.
