Guess I need to do a little editing on this...I was just jotting it down quickly to remember it, didn't know it would grab so much attention... The nice thing about a cold soup--you don't have to "cook" it...therefore no extra heat in the house :)

Peel 4 small cukes & puree in food processor. Add tsp minced garlic & dill, cup nonfat plain yogurt, tbsp apple cider vinegar, S & P to taste. Let it rest overnight in refrigerator. Going to try w/ basil, cilantro.

Cooking Challenges using our Share

At the beginning of the summer, we joined a community supported agriculture program. Every week, we receive a share of vegetables...and I have to figure out what to do with them. Cold Cucumber Soup
