What to serve a pseudo-vegetarian (no red-meat) in Bologna

Any menu and/or restaurant suggestions for Bologna (centro) to take someone who doesn't eat red meat?

Hey Susannah... I'm laughing a bit because when I saw "Bologna" I thought of how Americans usually spell the deli meat "Baloney" a.k.a. Bologna. I was like wow...she's starting a cool topic :-p. Had no idea "bologna" was considered red meat....duh! O.K...international folks...it's an Italian-American joke thing and the laugh is on me! I think your question is a great one. Will look forward to hearing about any vegetarian ideas even if not relating directly to Bologna "Baloney"...:-p

Ok Francesca I'm gonna have to kill you...that song has now been stuck in my head for the last hour. You are so funny; thanks for the trip back to childhood and adding a wee-touch more of americana to the website! (I never got over the boloney-bologna sandwich shock so still cannot eat mortadella) Thank god for the other wonderful Italian emigrants who imported so much yummy food and wine into the USA-- in return for our corn, potato and tomato (good trivia ammunition if you ever get into an argument about the value of America with an Italian...where would they be without polenta, gnocchi, or pizza margherita?) -- but I would have sent the mortadella guy back home). As far as advertising goes, they say pork is "the other white meat", but I guess it depends perhaps on the part (prosciutto and cooked ham are certainly not white...)

Hi Susannah,
I lived in Bologna seven years and I know there are some vegetarian restaurants, the first I remember is in Via Carracci, near the station (behind). So you would have some competitors...
I think it would be a great idea to make a place to sell cous cous... Italian couscous. You could make a lot of recipes and I think many people would be attracted for lunch, moreover if you put it inte university's zone (petroni-zamboni)...
